Bonhomous was produced by using techniques traditionally practiced in the Sancerre region of France. It is comprised of five varietals, primarily Chardonnay, Sauvignon Blanc and Pinot Blanc. This wine was created to accentuate minerality and freshness. It contains complex aromas of crisp apple, white flower, white peach and citrus. The palate is dry with fresh acidity and notes of green apple, just-ripe stone fruit, and a hint of muscat. The finish is clean and fresh with notes of apple, lime and refreshing minerality. In order to improve the complexity of the wine we fermented in the tank for a short time (approximately six months), in order to maintain freshness and minerality and avoid having too much volume in the middle of the mouth. Due to the young age of our vineyard, only 40% of grapes came from our herbicide-free vineyard the remainder was sourced from different vineyards in Oliver, Osoyoos and Kelowna. This year, we aged part of the wine in barrel for six months (30% old oak) and one month in bottle.
