A late season blend of Baldwin, Golden Russet, Wagener and other heirloom apples.
 
Harvested at the last possible moment, when the apples' sugars are high.  The high acidity of these varietals is balanced by a natural residual sweetness attained by the French Keeving method .
 
Each bottle underwent a secondary fermentation for a fine, natural bubble.
