An estate cider from the cidery's own little orchard of apples including Yarlington Mill, Orange Cox Pippin, Calville Blanc, Northern Spy, Golden Russet, Porter's Perfection, Chisel Jersey, and Foxwhelp.
 
A slow ferment with native yeasts at low temps, and it's aged and matured for about a year on the lees. Dry overall, with a great champagne-like effervescence, and some subtle hints of fruit leather, green grass, tobacco, and dried strawberries.
